I’ve always been a huge breakfast person. I love waffles, omelets, pancakes, biscuits, bacon, eggs, oatmeal, grits, fruit plates, hash-browns… all of it. You say let’s go to breakfast or brunch, and I’m almost always there. If I could eat a big, yummy breakfast every morning I would but, for the most part, those big breakfast meals usually only happen on the weekends. During the week, I still want something tasty that will fill me up, but don’t usually want to deal with the time or effort it takes to get that kind of meal ready. My favorite solution— overnight oats. I can whip it up quickly the night before and it’s ready to eat the next morning either at home or in the car if I’m in a rush. It’s also healthier and a lot more satisfying than a breakfast bar when there’s no time to cook breakfast. There are a lot of recipes for overnight oats on the web but I’ve played around with ingredients/portions and discovered that the concoction below is my favorite.
PS: I love to make my overnight oats in leftover Talenti containers. They are the perfect size and already have the screw-on lid. Any small Tupperware or bowl works, this is just how I usually mix them up and it’s perfect for grab and go in the mornings on your way out the door. If you’re going for aesthetic though, you can’t beat a classic mason jar.
Easy Overnight Oats:
Ingredients:
- 2/3 cup of rolled oats
- 1/2- 2/3 cup of almond milk (depending on how thick you like it)
- 1/2 cup of greek yogurt (any flavor works, but I love strawberry)
- 2 tablespoons of chia seeds
- Fresh fruit of your choosing (my favorites are blueberries, strawberries, and bananas)
*I almost always have greek yogurt in the fridge in either the big containers and/or the individual cups. If I’m adding from the big container, I measure out 1/2 cup as the recipe states. If I’m using an individual size (like pictured above), I add all but about 2 spoonfuls.
Directions:
- Mix the oats, greek yogurt, and almond milk together in a small container or mason jar.
- Add chia seeds. Stir.
- Cover and place in the refrigerator for a minimum of 4 hours. For best results, refrigerate overnight.
- Add fruit and toppings as desired. Enjoy!
* Sometimes I add other toppings depending on what I’m in the mood for… nuts, cacoa nibs, agave nectar, and cinnamon just to name a few.
