How is it already Christmas week?! So much fun to be had over the next few days and I’m sure, like me, many of you are baking up yummy treats in the kitchen. Today, I wanted to share my homemade peppermint bark recipe and how I make simple treat gifts for our neighbors. This is an easy and festive treat for the holidays that anyone can do, and it’s perfect to keep in the fridge for snacking at your own house or to give to neighbors, work colleagues, teachers, etc. I will note, however, that it’s really fabulous to snack on all winter long and doesn’t have to be boxed in to December only though.
For treat gifts, I just place several chunks of the peppermint bark in a clear, cellophane bag and tie off with pretty Christmas ribbon of some sort.This year, I added these personalized labels on the front from Bright Star Kids (our “Christmas with the Salyers” hard placemat that is pictured is also from Bright Star). For the neighbors, I just put these little bags with our Christmas card and we place them in the mailboxes. Luke is also taking several bags to his colleagues at work. Lots of options with this festive snack.
Homemade Peppermint Bark:
Ingredients:
- Chocolate Almond Bark
- Vanilla Almond Bark
- Crushed Andes Mint pieces (buy pre-crushed or crush yourself)
*Any brand of melting bark works just fine. I’ve used just about all of them.
Directions:
- Melt the chocolate almond bark chunks and spread across a cookie sheet lined with wax or parchment paper. Place in fridge to harden/set (20-30 minutes).
- Melt the vanilla almond bark chunks and spread on top of hardened chocolate slab.
- Sprinkle crushed Andes mint pieces on top (as much or as little as you would like).
- Place the entire slab back in fridge to harden up completely for 30 minutes to an hour.
- Break into chunks and enjoy!.
*I use a double boiler method to melt the almond bark, but you can do it in the microwave if you prefer.
*Make sure to wash out your bowl in between melting chocolate and vanilla bark if using the double boiler method.
*Tastes best if you store in the fridge. The chilled, chocolate mint flavor is the best!
